Coconut Pecan Cookies

    Recipe to follow:

    2 cups + 5 tbsp flour
    1 tsp baking soda
    1 tsp sea salt
    1 cup vegetable margarine
    1 1/4 cups dark brown sugar
    1/2 cup raw sugar
    1 vanilla bean, scraped
    Egg Replacer for 2 eggs
    3/4 cup chopped pecans
    1 cup shredded coconut

    Preheat oven to 400ºF; lightly grease baking sheets.
    Sift flour, baking soda and salt together; set aside.
    Cream margarine, sugars and vanilla on medium speed until light and fluffy, scraping sides of bowl as needed. Add egg replacer and beat until well blended, then mix flour in.
    Stir in nuts and coconut, mixing until blended. Drop dough by heaping tablespoons 2" apart on cookie sheets.
    Bake until edges are dark golden and centers are light puffy, about 10 minutes. Cool. Makes 24.
