Seitan Cacciatore Wrap

    Hearty Dinner meal on the go- I love food that I can wrap up and eat in a neat little package.
    Recipe to follow.
    Take 1-2 cups seitan and marinade:
    1 cup tomato sauce
    Dash of sage, oregano, basil, parsley, salt, and pepper
    1/2 cup pureed bell pepper
    1/4 minced onion
    2 cloves garlic, minced

    Once it is marinated, I baked in a 375 degree oven 15 minutes or until bubbly.
    Cut into strips.
    On tortilla, layer and roll up:

    1 leaf Bib lettuce
    Seitan strips with a little sauce
    Some cooked Quinoa or brown rice
    Sprouts of your choice

      Perfect. Yes, I'm sure the sharp knife is key - at my house, something like this always looks like I cut it with a rolling pin!
