I also create an "Ultimate" turkey sandwich from leftovers. Each year I've added a new ingredient, so the result is now somewhat extensive. It's now a double-decker sandwich with two distinct "zones". Made with 3 slices of toasted potato bread, Zone A contains:
Dark meat turkey, bits of stuffing, a small amount of gravy, and a thin slice of cranberry sauce. Zone B contains: white meat turkey, slice of cheese, mayonnaise, pickle slices and BBQ sauce. Microwave and press down.
