Recipe from TheKitchn's Very Simple Dal Palak, only I used 3 large potatoes, 15oz of spinach (part fresh, part frozen), 1 green pepper, half cup extra water, some additional lentils, additional sprinkles of spices, etc. This is one of those recipes that you can pretty much throw anything into the pot and just sort of go by taste to get it right. It's nice to have a base recipe to start with.
