Roasted cauliflower

    Ingredients:

    1 tablespoon vegetable oil
    1 head cauliflower
    1.5 cups (6 oz) plain Greek yogurt
    1 lime, zested and juiced
    2 tablespoons chile powder
    1 tablespoon cumin
    1 tablespoon garlic powder
    1 teaspoon curry powder
    2 teaspoons kosher salt
    1 teaspoon black pepper

    - preheat oven to 400°.
    - oil a baking sheet.
    - put all ingredients (except cauliflower) in a bowl, stir to combine.
    - with brush or fingers, coat the outside of the cauliflower.
    - roast until surface is dry and browned, 30-40 minutes.
    - let cool for 10 minutes before cutting and serving.
